Why we still cook in small batches

Cooking in small batches means the masala actually browns, the meat is not steamed into submission, and the daal keeps its texture. It costs us more in gas and labour, and it is the single biggest reason customers tell us our food tastes like home.
We cap each pot at forty portions. When demand grows we add cooks, not litres.
